Jiggs Dinner is a old Newfoundland boiled meal, made with fresh grown vegetable's and salt beef or salt pork ribs, peas pudding and steamed duff of any type.

I sometimes like to have fresh turnip greens with my boiled Sunday dinner/ jiggs dinner instead of green cabbage.
Traditional Newfoundland Turnip Greens
Years ago this meal was made by many Newfoundlander's on Sunday's, Christmas, Thanksgiving, Easter Sunday or special occasions and they didn't always have a baked chicken or roast it would be only the pot liquor " juice" from the boiler. This would be in a mug at the side of your plate to pour over your boiled dinner. Salted beef or pork riblets was cooked with our jiggs dinner to salt the pot liquor " juice" for your veggies.

Instructions
Method:
1. Soak salt beef or salt pork riblets overnight in cold water or boil in large boiler for 1/2 hour then drain some of the pot liquor/water, add more cold water to lower the amount of salt on the beef and in the pot liquor, then add 1 medium peeled onion to pot.
2. Pour 1/2 bag of yellow split peas in a pudding bag and tie the top with a string. Soak overnight or start cooking peas in your pudding bag with salt beef or salt pork riblets for about 1 hour then check to see if split peas are cooked. ' Tie pudding bag to the handle of boiler to keep from falling totally in the pot liquor/water, only covered in the water.
(Please note: You can remove the pudding bag from the pot or leave it in the water and add your vegetables with it.)
3. Peel and add veggies to cold water overnight or for a hour before starting to cook them. Add cabbage and turnip to you pot then boil for another 15 minutes.
4. Then add carrots, cook for another 10 minutes, then add potatoes and parsnip to your pot then boil for another 15 minutes or until potatoes are fork tender.
5. When the salt beef or salt pork riblets and vegetables are cooked, remove pease pudding bag from pot then cut the string from bag and pour all peas into a bowl mash with butter and pepper to taste.
6. Remove all vegetables from pot put in separate bowls.

Keep your pot liquid to serve with your jiggs dinner or for making gravy or soup broth.

You will need a cotton traditional pudding bag for your yellow split peas to make a steamed pudding. If not you can slow boil it in a small saucepan stirring every so often so it don't boil dry or burn.
